Red Curry Chicken With Cauliflower rice
Salt, Pepper, & Garlic Powder to taste
1 head of cauliflower pulsed in food processor until “ricelike” (cheese grater works too for true cavemen)
1/2 onion chopped
1/2 green or red pepper chopped
1 can organic coconut milk
2 tbs. of red curry paste
1 package of chicken breast or tenderloins. Cut into strips or chunks (Free-range preferred)
Extra Virgin Olive Oil
Start by bringing the can of coconut milk to a simmer. While that is going, get some olive oil in a pan and start sauteing the pepper and onions. In a seperate pan, a little more olive oil and get the chicken going.
Now that the coconut milk is simmering, add the curry paste and stir it with a wisk. Bring it back to a simmer then reduce heat stirring occasionally. Now add the cauliflower rice to the onion and peppers. Add a little more EVOO or grass fed butter to prevent the rice from sticking to the pan. Add whatever seasonings you want( I used sea salt, pepper and garlic powder.)
Once the chicken is cooked add it to the sauce. Plate the rice first, then add the chicken over the top with the sauce. I added fresh basil to the sauce at the end because curry and basil go really well together if you’re going Thai..Also works great with Shrimp! My mouth is watering just THINKING about this! A much healthier way to do thai!
