If you have been following a paleo or low carb diet and don’t typically eat white potatoes, I would encourage you to try reintroducing them to your diet. Last week, we talked about how a small change in how you cook rice and potatoes can actually turn them from something you should avoid, to something that you can incorporate into a healthy diet. This recipe is a great way to reintroduce white potatoes into your diet. If you are craving potato chips, especially my favorite flavor Salt and Vinegar, this recipe will help satisfy that craving. The only thing that’s missing is the crunch that you typically get with potato chips.
3 Medium White Potatoes
2 Tbsp Butter (Preferably KerryGold or another grass-fed brand)
3-4 Tbsp Apple Cider Vinegar
1 tsp Sea Salt
1 tsp Black Pepper
1 tsp Garlic Powder
-To maximize the health benefits and quantity of resistant starch, boil your potatoes the day before and let them cool in the refrigerator overnight.
-Heat up the potatoes in a microwave or oven.
-Add the butter, apple cider vinegar, sea salt, black pepper, and garlic powder.
-Smash it all together using a fork or flat kitchen utensil.
-Add more sea salt and vinegar to taste.
