Wild Salmon Egg Salad w/ Avocado Recipe

You may have seen my brother’s recipe about the best egg salad that he has ever had. Well this is honestly the best quick, at-home, lunch you can have! This recipe is like my brother’s egg salad on steroids. (Disclaimer: While we encourage jacked-ness, we don’t condone steroids or drug use here at Living Superhuman.)

What is amazing about this recipe is that it doesn’t need any liquids like olive oil or almost-liquids like mayonnaise, to make it moist and edible.

This meal is crazy quick, crazy easy, and freakin’ crazy delicious.

This is all you need:

1 can Wild Alaskan Sockeye Salmon (purchased at Costco, other Wild fish varieties like pink salmon would work too!)

1 hass avocado

2 hard boiled eggs (cage-free, omega-3 enriched are best)

1 celery stalk (is stalk the right word?)

Garlic salt & onion powder

WHAT TO DO:

Mash up the good parts of the avocado leaving the skin and pit behind. You can mix in the garlic salt and garlic powder now to get the right taste for your simple guacamole you just made.

I like to use a food processor to chop up the two hard boiled eggs.

You can do the same for the salmon and the celery if you like, or you can just use a knife and cut them up into smaller pieces. I like my celery pieces a little bit bigger for some crunchy variety.

Mix it all together in a bowl and let the party in your mouth begin.

Ironically, this could also make a great dip for a party too!  (Maybe leave the celery out of the mixed product and use it for dipping sticks instead!)
