Best Egg Salad I Have Ever Had! (Better than Non-Paleo too!)

So many times you come across a recipe in the Paleo world that is just as good as the non-Paleo versions that you used to make.  Things like Paleo Spaghetti and Paleo Brownies are some of the recipes that come to mind right away.  They satisfy the cravings for your favorite dishes just enough so you’re not up all night dreaming about the foods you used to be able to eat.

But every once in a while you come across a Paleo recipe that’s not only just as good as the original, but it actually blows the original out of the water.  This is one of those recipes!

A few days ago, I stumbled upon the easiest and tastiest egg salad, and I haven’t stopped eating it since.

Here’s how to make it…

Paleo Egg Salad


4 Hard Boiled Eggs

1 Hass Avocado

1 Heaping Tablespoon Dijon Mustard

Pinch of Garlic Salt and Pepper

Step 1: Throw all ingredients in a small bowl and mash it together!


That’s it! It really is that simple.

If you want to add a little extra kick to the recipe, feel free to play around with some added paprika, jalapenos, or hot sauce, but the recipe above should have a ton of flavor on its own.

Once you make this recipe, you are going to wonder why you ever used mayonnaise in the first place.

    Don’t mean to be a bummer and maybe I’m too new to paleo and my taste buds haven’t adjusted yet, but I really didn’t think it was that good. It really just tastes like I’m eating avocado but with a different texture. I’m going to try making egg salad with paleo mayo and see how that turns out.

    I just made this, but realized I had no mustard too late. So I used some wasabi paste I had in a tube. YUM! I also added some celery and onion.

    I saw this recipe a couple of weeks ago and pinned it. Picked up some avocados and eggs on Monday and just made it. I am eating it right now … soooooooo good!!!

    I cannot tell you how bummed I am right now that I don’t have any avocados on hand! I totally want to try this! I’ve got a few Easter eggs that need to get used up.
    Just out of curiosity, can you specifically taste the avocado? I’d love that, but it gags out my son. He loves the chocolate pudding I make with avocados and is a brave and willing trier of anything I ask him to, and usually likes anything I make, but one thing he can’t get past is tasting avocado.

      I’m with your son and think the taste of a raw cut up avocado is rather displeasing. But it doesn’t take much for me to really like it. I love the pudding and the egg salad with it. Sometimes for the egg salad I just use a couple pinches of garlic salt and a good amount of onion powder like a heaping tbsp, and leave out the dijon mustard and pepper. Try it both ways and see if you have a winner with him
